Keto Friendly Tuna Salad


 

When I started on this journey I instantly started to look for recipes.  I started using Pinterest to get some inspiration and also started reading some great Type 2 Diabetes books.  They all said tuna was a great food, and my mind instantly went to Tuna Salad. 

It all sounded like it would be perfect: tuna, eggs .... but wait.  What about my beloved Miracle Whip?  I checked the fridge and grabbed the jar .... sugar.  Yep, it's there.  And when one of your main goals is to cut out sugars from your foods, I knew I'd have to figure something out. 

I hit my grocery store and prepared Little Miss that Momma was going to have to read the bottles in the grocery aisle for a minute.  She thought I was loosing my mind, but she let me read.  And so I did.  They all had sugar in them.  Until I found one.  One with NO sugar! 


I may or may not have squealed with joy in the grocery aisle.  Kraft Avocado Oil Mayo.  I was so excited to find this - my food choices just expanded!  I was super excited to get home and try it, so I knew I'd be making a batch of tuna salad. 

I hard boiled 5 eggs and let them cool.  I always like some crunch in my tuna salad, (any salad, really), and I already had my celery cut and prepped for snacking this week.  Normally I use green onions, but thought celery would be a perfect replacement. 


Not many ingredients to have to remember here, folks, and that is just another reason this recipe is PERFECT.  Little Miss grabbed one of my hard boiled eggs, so down to four.  I quickly diced them up to keep them from disappearing.  I drained one can of tuna in water and flaked it with a fork into my bowl.  I then diced up 2 celery stalks cut into small pieces.


I added some sea salt and pepper and added about 1/4 cup of the Kraft Avocado Oil Mayo.  I mixed it all together and found I wanted it a little more creamy, so I did add another squirt or two of mayo.  I always make my family taste my food, so I called my husband in from the living room to try it.  He wasn't so sure about the mayo or the celery but low and behold he loved it.  Honestly you can't even tell there is a difference in taste.  I was ecstatic. 


Keeping on my goal of eating well, I grabbed two pieces of whole wheat bread.  I tossed those in the toaster because I was picturing my avocado toast and thought this would be a great alternative version.  I spread my tuna over the two slices and cut each in half. 

I've been keeping cherry tomatoes in the fridge for snacking, so I quartered those and topped my toasts.  Tomatoes and tuna salad go together very well for me, so this was a great topper. 


Adding some sugar free jello and unsweetened tea - this was a perfect lunch.  If you are eating Keto or eating for diabetes, this is a great tuna salad recipe!
