Holy Bubble Bake, Batman!
Have you ever tried a Bubble Bake before? If not, after you read this blog post you will, I promise you that! Meatless Monday in our house this week and I wanted something that would be hearty enough to fill my husband before he sets off to work but not a whole lot of work in the kitchen for a Monday night.
Monday night, meet Bubble Bake.
There are so many options you can vary this meal to your liking, but the Spinach and Artichoke version is our favorite. So let's jump in, because honestly, this is a recipe you will go crazy for.
- 1 pkg Chopped Spinach, (use frozen: thaw it and drain all the water from it)
- 1 can artichoke hearts, (drain and chop roughly)
- 1 can Grands biscuits
- 8 oz cream cheese
- 1 cup sour cream
- 2 tsp Cayenne Pepper (optional, but I suggest having a little heat!)
- 2 cups shredded Mozzarella Cheese
- 1/2 cup shredded Parmesan Cheese
Mmmm. Artichoke Hearts. I could eat these at least 3 times a week. Drain the water and lay out to chop roughly.
Add your artichoke hearts to a large mixing bowl and then add in your thawed and drained frozen spinach.
Grab your food processor, (or just your brute strength!) and we need to combine the rest of our ingredients. In your processor, or another bowl add your cream cheese, sour cream, 1 cup of the Mozzarella cheese, the Parmesan cheese, salt and pepper (to taste) and Cayenne Pepper. Combine together.
Once mixed, add to your spinach and artichoke bowl and fold in.
We are almost done with the prep! Such little work for such a delicious pay off!
Next up we need to open our Grands biscuits and cut each one into fourths.
Take those and add to your bowl of mix. We need to combine all of this, so gently fold the mixture into the pieces of biscuits.
And there we have it. In all it's gooey goodness! Heat your oven to 350 degrees and grab your 9x9 Pyrex dish (or other oven-safe dish) and lightly spray with cooking spray.
Add in your biscuit mixture and spread evenly.
Finally, top with the remaining shredded Mozzarella cheese...
Pop this Pyrex dish full of deliciousness into the oven for 1 hour.
About 20 minutes in your house will begin to smell of cream cheese heaven and either you, your spouse or your kids will want a peek. Here is my halfway peek picture. Do you see the little bubbles on the cheese? That is what heaven looks like.
For the last 4-5 minutes I changed my oven to broil just so I could get a nice golden brown layer of cheese on top. (Secret: It's my husband's favorite part)
Then you spoon out and plate up. My toddler isn't a huge fan of spinach, (let's be honest, neither are my older kids) but even the little one will eat this. I think it's because Mom and Dad are drooling, but it's probably because of the biscuits and cheese that totally steal the show in this meal.
So there you have it. You have now been introduced to the Bubble Bake. Feel free to mix it up and try different flavor combinations. Some other favorites of my own include a Pepperoni Pizza Bubble Bake - add in Pepperoni and/or sausage instead of the spinach and artichoke. Another is Buffalo Chicken with chopped chicken and buffalo sauce. Be creative ... have fun. After all, that's the point when you are cooking for your family. Add the love.
