Spicy Lime & Cilantro Chicken


There comes a time when you just want a new meal.  Tonight happened to be new recipe night.  My husband works doubles some days and today was one.  He's not a huge fan of cilantro so when I was deciding dinner I thought this would be the perfect night to try out this recipe. 

Let me just say: if you don't like cilantro or lime, this meal is not for you.  I however love both so it was almost fate for me to make this.  

It's a really easy and quick meal, so if you are looking for a 30 minute meal for dinner, add this one to your menu.

So let's get started!!  Here's what you'll need:

  • 2 boneless, skinless chicken breasts cut into cubes
  • 3 limes
  • 1 bunch cilantro
  • Cayenne Pepper (to taste)
  • 2 cloves of garlic finely diced
  • 2 tablespoons extra virgin olive oil

Begin by trimming the breasts of any extra fat.  Then cut into about 1" cubes.


Heat up your oil in a non-stick skillet and add in your garlic.  Once hot, begin by adding your chicken cubes.


Salt and pepper to taste and allow to cook through.



While your chicken is cooking, chop your cilantro and set aside.  


Once your chicken is cooked, begin adding your lime juice.


Cut the limes in half, use a fork and squeeze out all the juice of three limes over your chicken.


Now we need to add our spice.  The cayenne pepper is hot, so add according to your taste.  Like it really spicy, add a bunch.  Want just a touch of heat, sprinkle over sparingly. Saute for about 2 minutes to allow your flavors to all come together.


At this point sprinkle your cilantro over the chicken, stir and then turn off your heat.


And here is your final result.  The smells are fantastic!  


I cooked up a batch of long grain wild rice to serve with my chicken, but this would be good with any type of rice you prefer.



This really came out fantastic, but like my earlier warning, if you don't like lime or cilantro, you don't want to try this recipe!  The chicken is sweet with lime and the cilantro ... well, you either like it or you don't.  The spicy heat on the chicken, mixed with the citrus in the lime were amazing together.  

Try this one out when you are in the mood for spicy lime goodness!
