Parmesan Garlic Baked Potato Fries with Cucumber Dip


Potatoes.  A versatile food.  Sides, entrees, perfect for holidays and just about anything you can think of.  Fry them, bake them, mash them, fill them ... no matter what you do with them there are hundreds of ways to dress them up.

Always on the look out for a good Superbowl snack and side dish I wanted to give this recipe a trial run.  Husband working tonight so I didn't want a huge dinner just for me and the munchkin.  So a trip to my pantry produced a beautiful sack of potatoes.  It was a sign.  Or ... maybe just a craving.

Pretty easy recipe that you can whip up for the perfect side or great snack for the big game.


There is something so rustic about russet potatoes.  Wash them nicely and then get ready to slice.


I wanted classic steak fries so sliced them that way.  If you choose a thick cut fry you can also do that, or even thinly sliced to make potato strings.


So here are my wedges ... ready to get seasoned up.



Place on a baking sheets sprayed with non-stick spray.  Spread out.

Next, drizzle olive oil, Garlic Salt, pepper and cayenne pepper for a little kick.

  
You've got to get a little messy with this.  Toss together with your hands to completely coat all your potato wedges.  Spread out for baking.

Set your oven to 400 degrees and cook for 30-35 minutes.  


Now for the dip.  I wanted something light and crisp.  I took about 1/4 cucumber and diced.  Then, added about 1/2 cup light sour cream.  Mix together and set aside.

Once your potatoes have cooked I placed the Broil setting on my oven and allowed to Broil for 2 minutes just to get a nice crisp.

Pull out and then take Parmesan cheese and sprinkle liberally over the tops.  Using tongs toss lightly to coat.



Serve up with your cucumber dip and you, my friends, have a winner.  Crisp and delicious and the cucumber dip really sets off the potatoes.  I urge you to try these easy fries next time you need a snack or side dish.  I guarantee you'll be making more.
