So I am going to share one of the easiest and (in my humble opinion) tastiest recipes for BBQ Shredded Chicken.
Our best friend, the Crock Pot will actually do all the work for us for this recipe - does it even get easier than that?
Because I work during the week and my husband works evenings and doubles on the weekends, our schedules for dinner sometimes pass each other. This is one of those meals that I can make and no matter how far apart our dinner time may be, it can still taste perfect by allowing it to wait in the Crock Pot.
As we are getting ready to roll into the winter months I utilize my Crock Pot a LOT more ... mostly because it's easy and also because you can get some all-day cooking tastes with very little work.
So let's jump in on what we need:
- 1 - 2 bottles of your favorite BBQ sauce, (depending on how much protein you are using will determine the amount of BBQ sauce).
- 1 can of Coke
- 1 tablespoon of honey
- Crushed red pepper flakes (optional)
- 2 pounds of protein (I will get whatever happens to be the best price that week at the grocery store - this week was boneless, skinless chicken breasts but could use pork or beef)
Add your protein in the Crock Pot, then add your BBQ sauce.
Next up is the Coke - again, depending on the amount of protein will help with your liquid. I used about 3/4 of a can. And yes, Coke, not Diet Coke. Dr Pepper works really well in this recipe as well.
Add your 1 tablespoon of honey. This just sweetens it up.
Now, I don't use measuring spoons; I use my hand to measure. This is approximately 1 teaspoon. For this batch I wanted a little bite to the flavor, so added 2 teaspoons.
I did say this would be the easiest recipe, right? Because that's it. Mix all your ingredients together. You'll see the fix from the Coke start to help to break down that chicken.
Finally, put this on Low and allow to simmer all day. I let this simmer for 8 hours. If you want to do this quicker, you can put on high for about 4 hours.
About 2 hours before you are ready to serve you want to do a nice shred on the protein.
In case the chicken doesn't already shred itself, just take two forks and shred it. Mine was practically falling in pieces. This is delicious. Do a quality check and taste. At this point I added salt and pepper to taste. Then, the lid went back on to continue to cook and come together.
Because my house smelled so amazing at this point I couldn't WAIT for dinner time. Finally it arrived.
You can serve it up with almost any side dish - I wanted a salad with mine.
My mouth was watering at this point.
And there it is. Let me tell you ... this is so good - and so easy - you HAVE to try it.
The great thing about this recipe is that it will leave great leftovers. My husband loves it when we make this BBQ pulled meal because he will snack on it just as is. So, I get wife points for this meal.
