Allow me to preface this blog post with the disclaimer that this is on my husband's "Top 10 Meals My Wife Makes Me" list. He loves sausage and peppers and no matter what way I prepare them he loves it, however this is one of his most requested.
This is a quick weeknight meal and is very budget friendly. I love those kind of meals. It really can't get much easier than this recipe.
Gather up:
- 1 package of yolk-free extra wide egg noodles
- 1 package smoked sausage (or your preferred 'flavor')
- 2 bell peppers
- 1 large white onion
- 1 tablespoon crushed red pepper flakes
- 2 cloves of garlic minced
- 1 - 2 tablespoons of butter
So jumping right in we want to start our pasta water - fill your pot and add a little bit of extra virgin olive oil to the water to help keep the noodles from sticking. Allow the water to come to a full boil before adding your pasta.
Next up, cut your sausage into pieces along with your peppers and onions. I try to keep my peppers and onions the same size so they will cook evenly.
Add some olive oil to your saute pan and start your minced garlic, peppers, onions, salt & pepper. Allow to cook slightly, then add in your sausage.
Saute over med-high heat.
While this is going cook your noodles until al dente.
Once cooked, drain and put back in the pot off of the heat. Add butter and crushed red pepper flakes. Need it more/less spicy? Adjust your red pepper flakes. I like a medium heat to my sausage and peppers so I add about 2 tablespoons.
Your sausage and peppers should be cooked through at this point. I try to get a nice sear on my sausage ... just keep watching it until they are where you want them. This is YOUR food - you are allowed to play with it!
This is it folks. Really. Cook your noodles, cook your sausage and peppers. Then, serve. I didn't lie when I said easy weeknight meal.
Delicious bowl 'o sausage and peppers + 1 happy husband = 10 wife points. Don't ask me about the math ... just trust me on it.

Total cost: $7.00. Makes about 3-4 servings, however in my house it makes one serving for me; the rest for the husband. So if you have a husband like that - let's count this as 2 servings = $3.50 a serving.
