Weekends are one of my favorite things. And nothing gets better than Sunday morning in my house. Sunday morning is Pancake Day. My personal favorite and tradition for myself and my husband is banana pancakes. So this morning before he headed out to work he made us a batch ... so enjoying my "Daddy-Cakes" as our toddler calls them along with my morning coffee was a perfect start to my Sunday.
After cleaning the house, finishing laundry, (let's be honest, is it ever REALLY done?) and doing some little projects around the house I took full advantage of nap time today and did some organizing for my home business.
The afternoon brought on the prepping for our week. I have a full-time career and my husband works evenings and weekends for the local county Parks & Rec - so our time is definitely stretched during the week. By the time I get home from work there is sometimes just enough time for me to swing by the store to grab any essentials before he is setting out for the night. If it wasn't for planning ahead for weeknight meals I would be lost. (and possibly living on mac & cheese and Ramen)
Even though the weeks are hectic, I still hold true with the importance of a family dinner. Now, my husband is usually still at work by dinner time - but there is still a plate made for him when he gets home. Eating healthy and well is important to me and it helps me to instill this into my children.
So here's a glimpse into my weekly prep for this week.
First I started off by making a dozen hard boiled eggs. Now, you surely don't need a blog to tell you how to do this - but it's part of my prep. On my eating plan I take 2 hard boiled eggs for breakfast every morning to work. By doing the dozen all at once it saves me time during the week; this way I just grab and go in the morning.
I actually planned out my weekly menu on Friday when I did my 'big' trip to the grocery store. Here's what's on our menu this week:
- Monday: Momma's Gourmet Burgers with salad
- Tuesday: Stuffed pork chops with rice and corn
- Wednesday: Garlic, Lemon & Tomato Pasta
- Thursday: Baked Potatoes with side salad
- Friday: Take out Night
To attempt to save time during the week I try and do any prep I can on Sunday. So today I pre-made the burger patties.
My burgers are a pound of lean ground beef mixed with cheddar cheese, blue cheese crumbles and a few pieces of bacon diced. Once made up I wrapped with plastic wrap and sat them in the fridge; ready to throw on the grill.
Next was the pork chops. Very easy as I pick up butterflied chops at the butcher counter at the store. Pound them out so they are a little thin, then place spinach and light cream cheese. Roll up and secure with toothpicks. Same as the burgers, wrap up in plastic wrap and put in the fridge. That night I will simply place in a baking dish and bake with some long grain rice and corn.
Of course I have to prep for my toddler as well. With snacks she is pretty picky. Fruits, veggies and grains, yogurt and string cheese are her favorites. To give her a fun treat I make up my toddler version of trail mix. Trail mix is great as you can throw anything together you would like! This is my toddler's favorite mix:
- Honey Nut Cheerios
- Mini marshmallows
- Raisins
- Peanuts
Of course your prep all depends on your meal plan. Some weeks are easier to prep ahead of time than others. This one was easy meals that I could do prep work on. So I say, save time when you can!! This allows me more time to relax in the evenings, spend time with my family and not feel so 'busy' each night of the week.
