Tomato & Cucumber Summer Salad

A fresh salad just in time for summertime!!  This is a GREAT salad to make up and take with you to summertime get-to-gethers at the pool, the park - or, what I like to do is serve at BBQ's and take this with me to lunch at work throughout the week.  

With summer, comes the opportunity to eat a little healthier - the fruits and veggies are in season and can give such inspiration when at the store/farmer's market!

Try this salad out and I promise you will enjoy!

  • 3 hot house tomatoes (big, juicy ones)
  • 3 cucumbers
  • 1 bottle of vinaigrette (My current favorite is Kraft's Extra Virgin Olive Oil vinaigrette)
  • Mint leaves, (rolled up and cut into ribbons)
 First we just need to prepare the cucumbers and tomatoes.  All on preference on how you cut these for presentation.  I like mine is smaller cubes so will cut my tomatoes and cucumbers about the same size.  

I quarter my cucumbers and then slice.  Same with the tomatoes.

Mint is really optional here - I add it because I like to add it in for flavor, but this salad is open for substitutions.  Another good addition to this would be thinly sliced red onions.  (I'm not using them this time around because I will be taking to work for lunch and don't necessarily want onion breath during the day)  

Cut all your veggies and add to your bowl/container.  Then, add the entire bottle of vinaigrette and toss together.  
 
This is a salad that gets better with time.  So the longer you allow it to marinate together the better.  
 
So here we are: all mixed and ready to pop the lid on and pop in the fridge.  Yum!!
