Ranch Roasted Potatoes - Compliment for Meat

I more or less live in a meat and potatoes household.  I try and make it fun and mix it up to add a little variety to a regular Monday-night meal.  Tonight's meal plan: KC Strips on the grill with roasted ranch potatoes and corn.  My 2 1/2 year old will eat the entire bowl of corn if allowed, so this is a pretty frequent staple on our dinner table.  Luckily we don't mind. 

Okay ... so let's get to the star of this dinner tonight: Garlic Roasted Ranch Potatoes.  Quick, easy and flavorful, so really - you can't go wrong with this one. 

Quick to throw together and gives the everyday potatoes a fun boost. 

Let's start with our essentials:
  • one pound red potatoes
  • one package Ranch dressing powder mix
  • one white onion
  • garlic salt
  • red pepper flakes
  • cooking spray
Start out by washing and dicing your red potatoes.  You could use any potato you wish, I simply like the red potatoes and they looked good at the store. 

Dice into small, equal cubes so that they cook evenly.

Follow this up by dicing your white onion ....

Now, place all together on a cookie sheet.  I recommend a cookie sheet in order to get a crispier finish to these, (which happens to be how I like them).

Lay out on the cookie sheet and then spray with your cooking spray, garlic salt, red pepper flakes, salt and the package of Ranch dressing mix.  Mix together with your hands.

Place in the pre-heated oven and bake at 450 for about 20 - 25 minutes ... I like to check on mine mid-way through ...

We are looking good!!!  Again, cook until you get the crispiness you like the best.  Here is my finished product:


I could have eaten these straight off the cookie sheet, had it note been for the steaks....

Throw it all together .... and you have a dinner that you will love to sink your teeth into!! 



Not too shabby for a Monday night dinner.  The potatoes came out with a great flavor and everyone enjoyed them!!  No left overs tonight!!  Try these potatoes out next time you need a side dish; you won't regret it!!
