It's Sunday. The day of breakfast in my home. The day that I can have fun, slow down and enjoy some quality time with my family. This Sunday happens to be Father's Day. So while Daddy sat down with his cup of coffee, I got to work in the kitchen. This morning's menu includes Raisin Cinnamon Pancakes and Iced Coffee.
I took a store short cut on this one, and purchased some wheat pancake mix. I mixed the batter according to the directions and then added my 'extra's: cinnamon and one box of raisins.
My 2 year old loves raisins, (more than any child I've met) so she was very excited when she saw Momma pull out the raisin box first thing in the morning. I heated my griddle and added some butter.
Allow to cook until you see the bubbles forming; then it's time to flip ...
One side down, one left to go! You can see my raisins peeking out ... YUM.
And here is a finished stack of pancakes! They came out delicious and the cinnamon is a perfect addition. I like to consider it more of a staple in my house when pancakes are involved.
With breakfast over, it was time to move on for the day. So, after cleaning the kitchen and letting Daddy move on to cleaning the garage, (his choice, not mine!) I thought I'd give him a treat. We still had about 1/2 pot of coffee left from the morning. Never. I repeat, NEVER throw out your unused coffee!
Some ways to save it: once cooled, pour into an ice cube tray. Add to about a half a glass of milk. Allow the cubes to melt and you have iced coffee. Pour into a Tupperware and save for a brownie or cupcake mix. Replace coffee with the liquid to give your dessert a coffee flavor!
My absolute favorite way to use coffee ... making iced coffee. Instead of stopping at Starbucks or the local coffee shop ... why not make it for free?
Get your cup ready and fill with ice. Then take a cup of coffee and add sugar, (or sugar substitute) to add a touch of sweetness. Mix the coffee and sugar well. Pour into your cup of ice about 3/4 of the way up.
Fill the rest of the cup with milk. Stir. We drink flavored coffee here at home, (French Vanilla) but if you'd like to add some flavor you could do so with vanilla or almond extract, coco powder ... anything you'd like!
So here we have His and Hers iced french vanilla coffee. Now Daddy is ready to mow the lawn. :) Have fun with your breakfast and don't waste that coffee!!
