Whether you work outside the home or inside the home - weeknight dinners can be a challenge at times. What to make? Something quick and easy? Don't have time for the dinner you would love to have? One of my goals for 2012 is to try and give my readers some quick, easy and delicious meals that you can make any night of the week while still finding time to enjoy your family and get a little R&R in for you as well!
I am an organizer. I try to keep everything organized because with the hectic lives my family leads, it is so much easier to have a 'go-to' rather than trying to do something on the fly. The weekends are my reprieve. I do my 'big' grocery shopping on the weekend. At the same time I make my grocery list I also create a meal plan for the week. I assign a meal to each day of the week and have included an example of one here:
Tonight we are talking chicken fettuccine. My family loves pasta and I usually incorporate a pasta at least once or twice into my weekly meal plan. So last night it was pasta night. We had Momma's Chicken Fettuccine. To boost your nutritional value, use whole wheat pasta - just be sure to add salt to taste. Cook your fettuccine to your desired texture. Take boneless, skinless chicken breasts and season with salt and pepper. Dice into small pieces. Cook with a little olive oil until they are cooked through. This won't take long as they are small pieces.
While those are cooking, dice up a couple cloves of garlic and one white onion.
Remove the chicken and set aside on a paper towel to drain any excess oil. Add your garlic and onions to the same pot you cooked your chicken. You may need to add a little more olive oil. Season with salt and pepper and saute until done. Then, add your chicken back in and one jar of your favorite brand of Alfredo sauce. Now for some herbs, add in some garlic powder, Italian seasoning and a little crushed red pepper. Allow your sauce to simmer.
Once you have the perfect consistency and taste to both your sauce and your pasta, combine in a large pasta pot. Toss until your pasta is coated with all that yummy goodness.
