So today is a day for cupcakes. Today we are making spice cupcakes filled with cinnamon spice creme and topped with whipped cream cheese frosting. An easy recipe that will definitely impress. Start by baking your cupcakes. We used a simple spice cake recipe. Allow to cool and then hollow out a small hole in the top of the cupcakes.
Once all your cupcakes have nice, little holes - place some seasonal cinnamon flavored Cool Whip into a piping bag and cut the tip off. Then just pipe in your cream until you reach the top of the cupcake.
Now, you do the same with your icing. We used whipped cream cheese icing. Again, place in a ziplock/piping bag and then cut the tip off. Frost as you want. I like doing thicker tops to mine, but of course, frost as you like.
Last but not least ... to really top off your cupcakes, take a small block of chocolate and use a peeler to shave some chocolate on the top for your garnish. At this point you could garnish with anything you'd like. Perhaps a cherry on top? Add cinnamon into your icing? A little nutmeg? Get creative and do what you want.
And now you have some delicious looking cupcakes that will make everyone think you bought them at the local bakery! Here's a finished product, (moments before it was taste tested by me):
