Baked Chicken the Family Will LOVE

So tonight I wanted to do a simple, yet fun dinner for my family.  In order to help to keep things simple, yet still healthy, I wanted to do a sure crowd pleaser: French's Fried Onion Baked Chicken with mashed potatoes and corn.  If you haven't yet tried this recipe, I totally recommend you do.  I have used this recipe for the chicken for many different applications like:

  • Homemade Chicken Nuggets: just cut your chicken into chunks, bread as seen below and bake.
  • Chicken Parmesan: Do your own recipe, but bread the chicken with the French's Fried Onions - it gives this classic meal a GREAT upgrade.
  • Chicken Fettuccine Alfredo: Bake and bread the chicken breasts as seen below and top on a bed of your fettuccine alfredo.
Start out by fileting your chicken breasts.  Set aside.  Preheat your oven to 350 degrees and spray a Pyrex cooking dish with canola oil.  Now, prepare your coating and breading station.  Beat 2 eggs in a bowl with a tablespoon of milk.  In a second dish, prepare your breading.  Take a large package of French's Fried Onions, (same kind you use for green bean casserole at the holidays) and crush in a large Ziplock bag.  Add about 3 tablespoons of flour, crushed corn flakes, salt, pepper and garlic powder.  If you want a little more kick to your breading, try adding some crushed red pepper flakes.


Once you have your coating station ready - then dunk your chicken breasts in your egg mixture, coat evenly, then into your breading.  This is where it can get a little messy.  Use your hands to really press the breading onto your chicken.  I like a nice, thick crust so I will really make sure I have a nice crust on before placing them into my baking dish. 



Once you are done - place in your oven for 15 minutes.  While this is going, start on your sides.  Tonight I made mashed potatoes and corn - but you can use whatever sides your family likes the best. 

At the 15 minute mark I will flip the breasts over and cook for an additional 5 - 7 minutes.  Allow to cool for a few minutes before serving - but by baking these, you will keep the chicken breasts nice and moist - I'm telling you, your family will LOVE this recipe!!
