Grilled Pizza - Perfect Summer Evening Meal!

It's summertime!  We want to be outside and enjoy every minute of it with our friends and family and don't want to spend a lot of time cooped up inside cooking dinner.  It is fun to be able to have friends and family over and simply sit back and enjoy the company so in the summertime so I look for ways to make things quick and easy. 

My favorite part of the summer is the summer nights.  Sitting around with friends, having some drinks, some food and having some laughs.  Good times.  For most of my adult life, some of my fondest memories can be traced back to nights just like those ... I remember a few summers back sitting with good friends in their backyard and creating our own fire inside their Weber BBQ grill - we had a blast and still laugh about it to this day.  
I love making fun cocktails and experimenting with new creations ... a lower calorie drink is always a guilt free option.  Lower calorie Margarita: take one package of your favorite flavor of Crystal Light, (I love using the Strawberry Kiwi or the Strawberry Orange Banana), mix with a shot of Tequila, a can of Diet Sierra Mist, (or Sprite Zero) and a splash of lime juice.  So guilt free that you can enjoy several while entertaining your friends for the weekend and not have to do an extra 20 minutes on the treadmill the next day. 

My fun grilled pizza starts off simple enough, with a store bought pizza crust.  Remove the crust from the package and allow to come to room temperature to make it more manageable.  Depending on if you are doing one pizza or more than one, you will need to double your ingredients.  This is my summer Bacon Ranch Pizza.

Take bacon and cut into pieces and cook until crisp.  Set aside to drain any excess grease.  Roll out your pizza dough with a roller and some flour, (or you can simply do this with a large can if you don't have a roller) and roll it to about a 1/2" thickness -- you want a thicker crust for your grill.  Brush one side with olive oil and then flip over -- you want your oil on the bottom so that your crust doesn't stick to your grill.  Take your favorite ranch dressing and spread evenly over the entire crust, just like your pizza sauce.  Sprinkle with bacon pieces, chopped green onions, chopped baby spinach and sprinkle with mozzarella cheese.  Cook on the grill until the sides of your crust get as crispy as you like.  When you remove the pizza add halved grape tomatoes to garnish and cut into squares for serving.  

Low calorie margaritas, grilled bacon ranch pizza .... where's a Weber grill that I can start a fire in??!!
