With kids, jobs, errands and everything else squeezed into our days it can sometimes be challanging to make time for a date night. Top it all off with the trouble of finding a babysitter and the cost of a nice dinner out - sometimes it never actually pans out. Nothing says that you can't have a date night at home, however and avoid all the pitfalls of a night out. Make a nice, romantic dinner, put the kids off to bed early or a movie night in their room - complete with popcorn and sleeping bags. :) This is a recipe for more than a meal - it's a recipe for some bonding time with that special person in your life. We all need that. We all deserve that.
So my recipe for a romantic dinner is Prosciutto Wrapped Filet Mignon with pan sauce. Delicious, doesn't take a lot of prep time and is something that is a little out of the ordinary from the everyday.
Start out by picking out a nice piece of filet mignon and then cut into 1" cubes. Wrap each cube with a piece of prosciutto and simply sear in the skillet with olive oil and a tablespoon of butter. Cook til each side is a light golden brown color - these do not need much time as you will want to serve them mid-rare temp. When you reach your color consistancy take out of the pan and set them aside to rest. Allowing your meat to rest helps to keep in the yummy juices and keeps them from pouring onto your plate when you cut into them. Another tip is to start out by cooking your wrapped cubes seam-side down - this will prevent your yummy 'packages' from unwrapping in the pan.
Now comes the icing on the cake - the pan sauce. Add minced garlic and red onion to the fat in the pan and let sweat for a couple minutes. Add salt and pepper to taste. Add about 1/2 cup of chicken stock and let it all reduce down for another couple minutes. Add a tablespoon of honey mustard to your reduction and mix in completely. About a minute before serving add 1/4 cup of heavy cream and chopped Italian parsley. Pour your pan sauce over your beef cubes and serve with your favorite side.
This meal is fit to impress and can simply turn any night into a special night for the two of you. So why go to the trouble of going out, when you can stay in and indulge in a delicious meal at home.
