Mid-Week Smiles

So here we are smack-dab in the middle of the week.  You are over the initial shock of the new week, but still not quite close enough to begin celebrating the weekend and all it's glory.  I always try and brighten up dinner on Wednesdays - my little gift.  I know that most people come home after work, crack a beer or have a cocktail, watch TV or surf the Internet to unwind from the day.  I find peace in cooking.  There is something to be said for having that time in the kitchen.  I can't control the traffic on the way home.  I can't control the phone calls during the day.  I can't make my patients feel better.  But at the end of my day - I can make the oven cook on the temperature I want.  I can make my meal taste as delicious as I can.  I can create something out of simple ingredients.  That gives me peace. 

So let's talk middle of the week dinner.  I want something simple; yet I want something packed with flavor.  I love Italian cooking and am drawn to one of the first recipes I ever learned to cook.  My mother made this recipe constantly as I was growing up and whenever I make it for my family I am always drawn back to my childhood.  She actually adapted this recipe from when her and my father were first living together in their first apartment.  They had an older Italian couple living across the hall and they shared this meal with my parents.  Classic Pasta Carbonara.  Sweet.  Savory.  Delicious. 

Over the years I have made this recipe my own and actually do a handful of variations on it from time to time depending on my mood and what is in the fridge when I am cooking dinner.  This is one of those such versions. 

Take a package of bacon and cut into strips.  Cook over medium high heat and then set aside on a paper towel to drain off the excess grease.  While I'm doing this I'm also starting my pot of water for my pasta.  I always add canola or vegetable oil to my pasta water before it is boiling - in theory this keeps the pasta from sticking together while cooking.  Finely chop one white onion and garlic.  I am a HUGE garlic eater - I myself will usually chop about 4 heads of garlic but by all means - use as much or as little as you choose for your tastes. 

Saute the garlic and onion with a little salt and pepper to taste until they are nice and translucent and all married together in the skillet.  When your pasta water comes to a boil add a handful of salt and then your pasta.  My pasta of choice for this meal is spaghetti - though you can use any type of pasta you wish.  In a small bowl mix two eggs, garlic salt and Italian seasoning.  Set this aside until your pasta is cooked through.  My pasta always goes past the al dente stage in order for my one year old to enjoy and eat as well.  :)

Drain your cooked pasta and put back into the same pot.  To this add your egg mixture and combine until it is all blended together.  Add your bacon, onions and garlic.  Fold in Parmesan cheese and two chopped Roma tomatoes.  Serve. 

My one year old absolutely LOVES this dish.  She will eat it by the handful!  I love it because it is quick, easy and cheap.  Of course you can serve this with a side salad or garlic bread - or let it stand alone.  Every time I take a bite of this I am standing right next to my mother at our stove in the house I grew up in ....
