Black Bean & Corn Quesadillas



My husband works in the evenings - so most nights I can kind of pick my own personal dinner menu.  My mom recently discovered Pinterest, (I tried to warn her of the addictive powers...) and found a black bean quesadilla recipe that she instructed me I just HAD to try.

I will say - it came out pretty successful.  I loved it, plus had plenty left over to eat just as a side dish and take for lunches throughout the week.  Win/win in my eyes.  

  • 2 cans black beans
  • 1 package frozen corn, (defrosted) *you can substitute fresh corn as well
  • 1 red onion finely diced
  • 1 package of white shredded cheese
  • tortillas
  • 2 limes
  • 2 roma tomatoes
  • Sea Salt ( to taste )
 You'll want to get a large mixing bowl and begin by adding your ingredients.  Take the two cans of black beans, drain and rinse.  Add to the mixing bowl.  Add the corn to the bowl.  Dice the tomatoes and onion and add in.  

Then you will will want to micro plane the limes over the mixture in the bowl.  This will add a punch of flavor instantly. 

So now we have everything ready to mix together.  Squeeze the limes generously over the entire mixture and then mix together.  Add salt to taste.

It's more than okay to dig your spoon in at this point and taste.  I cannot resist.  

Now we are ready to make our quesadilla's.  You will want a non-stick pan and then spray with light cooking spray.  (you can also use a flat-top griddle)

Put your tortilla down and add a small handful of cheese.  Then some heaping spoonfuls of your black bean/corn mixture.  Lastly you will want another small handful of cheese on top.  Remember that the cheese is your glue.  Just like with a craft project you don't want too much; otherwise it just squeezes right outside the sides.  

The next step is to fold over the half of the quesadilla and allow to cook until you have a nice, light-brown color on the tortilla.  

Yum!!!

Flip over and cook until light brown on both sides.  

Add a small dollop of greek yogurt and you are ready to dig in!!!  You could of course serve with sour cream, guacamole, salsa or even pico de gallo.  Since I'm trying to eat a little healthier I chose the greek yogurt on this one.  

A light, easy and delicious weeknight meal!!
